Homemade Vinaigrette Three Ways

Have you ever spent a summer in New Mexico? If you have, you know:  It. Is. Hot. Gone are the days of oven roasted vegetables and pots of hearty stew. Luckily, my boyfriend and I adore salad, making for an easy weeknight meal, one I resort to at least 2-3 times a week.

I absolutely love tossing up a big bowl of salad for my boyfriend and I to share while sprawled out on the couch, watching one of our shows, fan blowing directly on us, (curse the ever so ineffective swamp cooler!). When I say share, I mean we literally both eat out of the same bowl. It’s one of my favorite activities, and something I miss when one of us is out of town. What makes our salad even better? Homemade dressing. I learned the art of homemade vinaigrette while living with my aunt Maria (kitchen goddess extraordinaire) in Chicago. Making dressing from scratch is easy as 1, 2, 3, and the flavors outshine any bottled version.

The standard base to any vinaigrette is 1 part vinegar to 3 parts oil, salt and pepper. From there, toss in whatever herbs and spices tickle your fancy. Easy peasy lemon squeezy! Below are a few variations on rotation in our house. Use these as a starting point and experiment with whatever ingredients you find in your kitchen.

Dani's Go-To Vinaigrette

Simple & Delicious 

Ingredients

  • 1 Tbsp balsamic vinegar
  • 2 tsp dijon mustard
  • ¼ cup olive oil
  • Pinch of salt
  • Freshly ground pepper

Combine ingredients in a small jam jar and shake until uniform. Use what you need and keep the rest in the jar in the refrigerator. You could also do this using a bowl and small whisk, but I prefer using a jar for ease of storage if I don’t use it all at once.

Spicy Asian Vinaigrette 

Transform Your Greens 

Ingredients

  • ¼ cup avocado oil
  • 1 tsp toasted sesame oil
  • 1 Tbsp rice vinegar
  • 1 Tbsp coconut aminos
  • 2-3 tsp Sriracha
  • 1-2 tsp honey
  • 1 tsp ginger
  • 1 tsp minced garlic
  • Pinch of salt
  • Freshly ground pepper

Combine ingredients in a small jam jar and shake until uniform. Use what you need and keep the rest in the jar for later.

Creamy Avocado Vinaigrette

  • 1 avocado, halved or quartered
  • 1 clove garlic, minced, if you feel like it or you have a jar of minced garlic in your fridge
  • ¼ cup olive oil
  • Juice of one lime
  • Splash of white wine vinegar
  • Pinch of salt
  • Freshly ground pepper

Combine ingredients in a blender until smooth. Use what you need and store the rest in a jar with a tight lid in the refrigerator.
 

***Full discretion: I rarely measure dressing ingredients so these are all guesstimations. Consider the measurements suggestions and tweak to your palate. Have fun with it!
